Cutting the drudgery of kitchen tasks with sharp knives

If you dread cooking because you hate the prep work that involves peeling, slicing, etc. it might be because you are working with dull knives. We often cook at other people’s homes because we love to cook. Often we find that people have very expensive knives that have never been sharpened. No matter how exquisite the knife is, a dull knife is both dangerous and difficult to work with.

We have given many friends and family members Chef’s Choice knife sharpeners as gifts so that they will enjoy sharp knives and we will also when we are visiting chefs. We do not normally spend a lot of money on knives. Good knives well sharpened perform beautifully. The one exception is the amazing Global knife we received as a gift from generous friends. We love the balance and quality of this knife and it is our “go to” knife for many tasks.

I then use the knives exclusively on cutting boards. I prefer Norpro Cut-N-Slice Flexible Cutting boards for several reasons. First they are cheap so i can keep a lot of them on hand. Second the flexibility means I can fold them into a chute to pour whatever I cut into any container I desire third they can be sanitized in sink with a little detergent and bleach and finally I can throw them away when they get a lot of dirt trapping cuts in them.
