Buttered Almond Crepes Recipe

Ingredients:

4 eggs

¼ c whole milk ricotta

4 TBSP butter

½ tsp vanilla extract

1 tsp Truvia brand stevia sweetener

½ cup sugar freee pancake syrup

½ c roasted and salted almonds

The secret to crepes or omelettes is a pan reserved for the purpose. We have one we recommend in the latest post in the recommendations category.

Put serving plates in the oven to warm at 170 degrees.

Chop the almonds coarsely. We use a mini food processor to do this.

Melt the butter In a small sauce pan

Place the eggs, ricotta, stevia and vanilla in a blender and blend at high speed until smooth and creamy. Drizzle half the melted butter into the batter with the blender running at a low speed.

Preheat the fry pan, brush with butter. We use a silicon pastry brush to place a thin film of butter on the pan.

Put enough batter in the pan to coat the bottom. Shake and rotate the pan to create a thin even coat.

When the edges brown, use a silicon spatula to turn the crepe out onto a serving plate. Repeat until the batter is used up.

Toast the chopped almonds in the remaining butter.

Warm the syrup.

Serve the warm crepes topped with buttered almonds and sugar free syrup.
