Gazpacho with Chicken and Avocado Recipe

INGREDIENTS

1 Large Can of Tomatoes with Juice (35oz)

1 Onion

1 English Cucumber

1 Bell Pepper color of your choice

2 Stalks Celery

1-2 Tbsp. Chopped Fresh Parsley

1 Clove Garlic Chopped

¼ Cup Red Wine Vinegar

¼ Cup Olive Oil

4 Tbsp. fresh Lemon Juice

1 tsp. Truvia (sweetener)

Salt and Fresh Ground Pepper to taste

6 or more drops of Tabasco to taste

4 Cups V8 Juice

4 Large Avocadoes

2 Lb. Grilled Boneless Chicken Breast

Recipe serves eight

 

Halve onion, cucumber, bell pepper, and celery. Place half of these vegetables in food processor and pulse until desired consistency. Add tomatoes and juice and pulse briefly. Dice the other half of the vegetables and place in large bowl. Add vegetables from food processor to large bowl. Chop fresh parsley and garlic and add to bowl. Add vinegar, olive oil, lemon juice Truvia, salt, pepper, Tabasco sauce and V8 to large bowl and stir. Taste and adjust seasoning. Use additional lemon juice to brighten flavors to taste.

Cover tightly and refrigerate at least 6 hours.

Spoon into shallow bowls and top each with a quarter pound of grilled cubed chicken and half of a diced avocado. Garnish with freshly chopped cilantro.

Delicious Indonesian Style Shrimp Salad

We eliminated the brown sugar and substituted a teaspoon of stevia and two tablespoons of soy sauce. Instead of mixing everything together, we tossed the romaine with the dressing, placed it on the serving plate and  garnished with the other ingredients to create a composed salad with lots of eye appeal.

Served with a crisp Sauvignon Blanc from New Zealand’s Marlborough Valley or a dry Prosecco or Cava, this is a wow lunch or light supper for guests or one romantic couple.

Secret Strategies for Reading a Book a Week and a Free Book For You

Many people ask me how on earth I read a book a week. I have maintained that pace for many years because I have an insatiable appetite for information and I really enjoy reading. I have done this even when working 10-12 hour days.

Many people tell me they are lucky if they can get through one book every month or two. Others tell me they would love to read but they have no time for it and haven’t read a book in  a long time.

My secret has two parts. Part one is reading every night at bedtime. I find reading very relaxing and an easy way to slip into the pre-sleep mode. The Kindle books are ideal for this kind of reading. The Kindle Fire screen can be read without a light on so one person can go to sleep while the other reads. Kindle books are less expensive, they do not take up shelf space and the reader is lighter than a book and so is easier to hold while reading.

The second is Audible.com. Audible has an incredible inventory of books available and I can “read” them unabridged while cooking, cleaning, driving, walking, working out or just relaxing on our patio. The audio books from Audible are inexpensive, and very high quality. Suz and I always search together for a novel that is the same number of hours in length as an upcoming road trip. On a recent road trip from Los Angeles to Alabama we listened to The Game of Thrones Song of Fire and Ice which was 33 Hours and 50 delightful minutes long. There have been times when we returned home from a long drive and sat in the driveway to finish a chapter.

I have a monthly “Platinum” plan with Audible that provides me with two books per month for $22.95 or $11.47 per book. In addition Audible runs specials from time to time with discounted credits. I buy these whenever available so I am never without spare credits. The monthly plans also include a daily subscription to the audio version of either the Wall Street journal or the New York Times.

One tip that I find very important is to listen to a sample of the book before you buy it. You will find most of the readers to be very pleasant to your ear but occasionally you may find one you do not enjoy. My favorite readers take the written word to new heights. The voices, quality of the reading and recording is truly astounding.

Breakfast Shake

This is our “go to” breakfast. The purpose is to get all of our vitamins and minerals with a large dose of essential fatty acids from fish oil. The fish oil dose is very high. It is roughly the amount found in 20 fish oil capsules. This might be more than most people need or should take so discuss the dose with your doctor before using this much.

Ter takes it to manage a family tendency toward high triglycerides. In his case it cuts the triglycerides in half which is better than the prescription drugs tried previously. Fish oil also reduces clotting and therefore may reduce the chance of a heart attack or stroke caused by clotting. Fish oil also reduces inflammation which is implicated in many different issues. The shake also has a lot of protein in it. The fruit provides quite a bit of carbohydrate for a low carb diet but the fruit also supplies fiber and a rich supply of phytonutrients and antioxidants. The taste of the shake is very good despite the fish oil which taken alone tastes a lot like furniture polish.

The blender creates an emulsion that makes it easy to absorb the vitamins, minerals and fish oil. This overcomes absorption problems common to vitamin and mineral pills. This shake is the reason we have burned up several very good blenders before we invested in the VitaMix.

Depending on your protein needs or how strict you want to be with carbs, it would be possible to reduce either the protein powder or the fruit. Adjust to your needs.

CytoSport Complete Whey Protein 2 Scoops

Carlson Fish Oil 1 Tablespoon

All One Vitamin and Mineral Powder 1 Scoop

Ice Water 3 Cups

Frozen Berries 2 Cups

Place the ice water in the blender with the protein powder and vitamin and mineral powder. Blend until smooth. Add the fish oil to the vortex in the blender and allow to emulsify completely. Stop the blender and add the berries. Use the VitaMix Accelerator/Tamper tool to get the berries to blend into a smooth shake.

We buy frozen berries in large packages from Costco or Sam’s. Frozen berries are harvested at their peak and the fact that they are frozen helps to produce a thick and creamy shake. the cost at the big discounters is manageable. The little packages at the grocery store were cost prohibitive. For fewer carbs substitute a half cup of almonds and a dash or almond extract or vanilla extract. the VitaMix will turn almonds into almond milk in a minute at high speed. less capable blenders might just make a sand like substance from them.
