2 Oz Cream Cheese
¾ C Ricotta
½ C Splenda (The kind that measures the same as sugar cup for cup)
2 Tbsp. Vanilla extract
2 Tbsp. Instant espresso powder
½ C Dutch Process Cocoa Powder
½ C Chopped nuts (I prefer the sliced almonds that I lightly chop further in a food processor)
Put all ingredients except the almonds in a food processor and process until fully blended. Scrape down the sides with a spatula to incorporate all ingredients to make a thick frosting like substance.
Spoon out uniform portions to form into balls which are then rolled in the nuts
Refrigerate to let flavors meld and the chocolate to firm up a bit.
Enjoy when that desire for something rich, sweet and chocolaty hits.
